Miguel Angel Lascarez Reyes, though not born or raised in Japanese culture, has fully embraced its culinary traditions with passion and dedication. His journey as a sushi chef began after working in various types of restaurants, but it was the moment he was introduced to the art of sushi that he knew it was his true calling. Throughout his career, Miguel has learned the importance of professionalism and the pursuit of excellence in both food preparation and customer service. His philosophy is rooted in giving his best and constantly striving to create an exceptional dining experience. His collaboration with Chef Damon Cho has been marked by a shared commitment to innovation, resulting in a dynamic partnership that elevates the guest experience at Izakaya Osen.
Since joining Izakaya Osen, Miguel has played an integral role in upholding the restaurant's reputation for excellence.
